Simplicity is undervalued

I think that simplicity is undervalued.
Sometimes I feel that I need to get away from the complex tangle of flavours that I see on a daily basis to go back to something easier to make,simpler and just as gratifying.
One afternoon I was sitting at home doing some stupid assessment task for school and I got the munchies.
I dug around in the fridge and came up with a wheel of brie and some left over roast pumpkin from the night before.
I stuck a piece of wholemeal bread in the toaster, mashed some pumpkin and cut large slices of brie to put on top. The taste was complex yet simple- the bits of onion,roast meat and gravy stuck to the pumpkin was divine.
I swear that if I had to pick what to have for my last meal I'd slip this in as an entree'.
